Oh boy, get ready for my new recent discovery about how easy it is to make any leftover veggie a great chip and still be healthy and yummy!

Fennel.
I know, I know you were NOT expecting that uh!
Well, I always hated fennel, because probably my mum used to boil it or make it in one way that was Not appealing at all. Ayurveda taught me that fennel is one of the best veggies we can have, so I started to find a way to make this great vegetable yummy and appealing.
One night, I opened my fridge, and after realising that I had 4 fennels in my fridge I decided to do something about it.
and I started cutting them into slices, then put on a tray, covered in good old Olive oil, rosemary, salt and pepper and shoved in the oven on ventilated – high for 30ish mins.
The result? A-M-A-Z-I-N-G!
The fennel was crispy at the ends and in the middle was juicy and full of taste that was nowhere near the taste I had a bad memory of.
Fennel has got an inner layer of some watery goodness that when you cook it, it becomes soooo juicy it is now my favourite veggie!
This is great as a side or an entree with a dip perhaps, and will blow your socks off!
