First of all, I am finally out of the semester, alive and well.
I learned so much from this semester and I am so happy and satisfied with how it went!
Therefore, this semester finally I got to learn A TON about food, especially the super foods and healing foods and practices and it was super interesting to incorporate what I have just learned in my life.
It’s all about BEING the EXAMPLE right?
As a result, I came up with a REAL EASY recipe that can be for dinner, lunch or even a snack!
Inside I put some of my faves healing food, that have got loads of healthy properties like:
- Anti-inflammatory
- Anticancer
- Stimulant of red blood cell production
- Calming for the digestive system
- Antioxidants (a LOT!)
- Vitamin C rich
- Vitamin A
- Immune system booster
Are you ready for the yummiest bloody good winter salad ever?
Right, for this recipe we have THREE parts to it which I will divide 😉
- Dressing
- Oven
- Bowl
The Dressing is the easiest, is just a generous TBSP of hulled Tahini (my beloved), with a TSP of Miso paste and a little of boiling water. Then, mix well until it becomes semi-liquid like a paste.
For the Oven, we will have some Sweet Potatoes and Eggplants with some Rosemary, at 200 degrees for 25-30 mins depending on the oven.
In the Bowl, we will grate some Beetroot, chop in fine strings some green Cabbage, chop very finely some Ginger (cut about a dollar thick from the root), add some Fennel seeds, a squeeze of Lemon and in little strings, we will chop some Gala apples, or any apple in season.
the Final touch to the bowl will be adding Pepitas and Pomegranate, and pepper to taste.
Also, please add a very generous (Italian) amount of EVOO, it is just never enough.
Once all is ready we will mix all of these AMAZING HEALTHY ingredients together to our winter salad, that it is indeed bloody good 🙂

Finally, when you mix it all together you will have a real deliciousness that is PACKED with nutritious food that only took… half an hour to make!
You can make this bloody good winter salad as much as you want and leave as the next day leftover, or sandwich filling 😉
